- 4 small chicken breasts (about 1 1/4 pounds)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cups cooked rice or quinoa
- 2 cups halved grape or cherry tomatoes
- 2 cups diced cucumber
- 4 cups shredded romaine lettuce
- 1 cup sliced red onion
- Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, lemon juice)
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
- Pound the chicken to about 1/2 inch thick and marinate in the mixture for at least 30 minutes.
- While the chicken marinates, prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and dill.
- Cook rice or quinoa according to package instructions and chop vegetables.
- Preheat the air fryer to 380°F or heat oil in a skillet over medium-low heat. Cook chicken until golden brown and reaches an internal temperature of 165°F.
- Let the chicken rest before slicing it into strips.
- Assemble bowls with rice or quinoa base topped with sliced chicken, chopped veggies, tzatziki sauce, and feta cheese.
