  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, lemon juice)

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound the chicken to about 1/2 inch thick and marinate in the mixture for at least 30 minutes.
  3. While the chicken marinates, prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and dill.
  4. Cook rice or quinoa according to package instructions and chop vegetables.
  5. Preheat the air fryer to 380°F or heat oil in a skillet over medium-low heat. Cook chicken until golden brown and reaches an internal temperature of 165°F.
  6. Let the chicken rest before slicing it into strips.
  7. Assemble bowls with rice or quinoa base topped with sliced chicken, chopped veggies, tzatziki sauce, and feta cheese.
