Ingredients
- 1 lb boneless chicken thighs
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 cup Greek yogurt
- 1 medium cucumber (grated)
- Fresh parsley (for garnish)
- Fresh veggies (lettuce, tomatoes, onions)

- Cook the chicken: Heat a griddle or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until cooked through. Allow it to rest before slicing.
- Make tzatziki: In another bowl, mix grated cucumber (squeezed), yogurt, minced garlic, lemon juice, salt, and chopped dill until combined.
- Assemble gyros: Warm pita bread and layer sliced chicken with fresh veggies and tzatziki sauce. Garnish with parsley.
