Instructions
- Season the chicken breast with olive oil, paprika, garlic powder, salt, and black pepper.
- Preheat the grill or grill pan over medium heat and grill the chicken for about 6-7 minutes per side until fully cooked.
- While the chicken cooks, prep your veggies by halving cherry tomatoes and slicing cucumbers.
- In serving bowls, layer mixed greens first, then add the sliced chicken followed by cherry tomatoes, corn, cucumber slices, and a scoop of guacamole.
- Optionally sprinkle red chili flakes before serving.
