- 1.5 lb salmon fillet (skin on)
- Zest and juice from 1 large orange
- 1/2 T olive oil
- 1 T brown sugar
- 1 tsp chipotle chili powder
- 1/2 tsp cumin
- Kosher salt and freshly ground black pepper
- Fresh parsley (for garnish)
Instructions
- Soak a cedar plank in beer and water for at least 4 hours.
- In a small bowl, whisk together orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
- Season the salmon with the marinade, salt, and pepper; place it skin-side down on the soaked plank.
- Preheat grill to medium-high heat (415°F). Grill the salmon on the plank for 25-30 minutes.
- Serve directly from the plank for an impressive presentation.
