Instructions

- Boil cubed potatoes in salted water until tender (about 12-15 minutes). Drain and mash with butter and milk until creamy; season to taste.
- Grill marinated chicken over medium-high heat for 5-6 minutes per side until cooked through (internal temperature of 165°F).
- Combine chopped lettuce and tomatoes in a salad bowl; drizzle with olive oil and lemon juice or balsamic vinegar before tossing.
- Serve grilled chicken alongside creamy mashed potatoes and salad; garnish as desired.
