- 4 ripe nectarines
- 8 ounces burrata cheese
- 8 slices prosciutto
- 4 ounces cherry tomatoes
- 2 heirloom tomatoes
- 1/2 cup fresh cherries
- 1/2 cup mixed baby spring greens
- Vinaigrette made from lemon juice, apple vinegar, lemon zest, fresh herbs, and olive oil
Instructions
- Preheat the grill to medium-high heat.
- Slice nectarines into eighths and brush lightly with olive oil.
- Grill nectarines for about 2-3 minutes on each side until grill marks form.
- In a small bowl, whisk together all vinaigrette ingredients until combined.
- In a large bowl, toss mixed greens, tomatoes, cherries, and vinaigrette gently.
- Top salad with torn burrata and prosciutto slices; sprinkle with herbs and pepper.
- Serve immediately with toasted baguette if desired.
