- 2 zucchinis (about 10 inches long)
- Olive oil
- 4 tsp. Greek seasoning
- ½ cup Newman's Own Classic Oil and Vinegar Dressing
- 2 cups cherry tomatoes (halved)
- 6 oz. can pitted black olives (halved)
- ¾ cup crumbled feta cheese
- 1 tbsp dried Greek oregano
- Fresh ground black pepper
- Fresh parsley (for garnish)
Instructions
- Preheat the grill to high heat.
- Trim both ends of the zucchinis and slice them lengthwise into quarters. Brush with olive oil and sprinkle Greek seasoning on cut sides.
- Grill zucchini cut side down for about 3-4 minutes; flip and cook until tender but still crisp.
- Whisk together dressing and oregano in a mixing bowl while zucchini grills.
- Cool grilled zucchini slightly, then cut into bite-sized pieces. Toss in dressing along with cherry tomatoes, olives, and feta cheese.
- Season with black pepper and garnish with parsley before serving.
