  • ½ cup Newman's Own Classic Oil and Vinegar Dressing
  • 2 cups cherry tomatoes (halved)
  • 6 oz. can pitted black olives (halved)
  • ¾ cup crumbled feta cheese
  • 1 tbsp dried Greek oregano
  • Fresh ground black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the grill to high heat.
  2. Trim both ends of the zucchinis and slice them lengthwise into quarters. Brush with olive oil and sprinkle Greek seasoning on cut sides.
  3. Grill zucchini cut side down for about 3-4 minutes; flip and cook until tender but still crisp.
  4. Whisk together dressing and oregano in a mixing bowl while zucchini grills.
  5. Cool grilled zucchini slightly, then cut into bite-sized pieces. Toss in dressing along with cherry tomatoes, olives, and feta cheese.
  6. Season with black pepper and garnish with parsley before serving.
