Instructions
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together honey or maple syrup, melted coconut oil, and vanilla extract.
- Pour wet ingredients into dry ingredients; add grated carrots and mix until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until golden brown around edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
