Instructions
- Cut chicken into 1-inch pieces, season with salt and pepper.
- Mix seasonings in a bowl; sprinkle half over chicken.
- Coat chicken with olive oil and toss.
- In a large skillet, heat oil over medium-high heat; add chicken and cook until browned (6-8 minutes).
- Set aside cooked chicken; sauté onions for 2 minutes, then add broccoli, zucchini, and bell peppers.
- Season veggies with remaining spices; cook until crisp-tender (4-6 minutes).
- Add broth; stir well.
- Return chicken to skillet; combine and heat through for another minute.
- Garnish with parsley before serving.
