- 1 1/4 lbs boneless chicken breasts, diced

- 10 oz zucchini, sliced
- 10 oz yellow squash, sliced
- 1/3 cup grated parmesan cheese
- 2 tablespoons fresh lemon juice
Instructions
- Dice the chicken breasts into small pieces.
- Combine salt, pepper, garlic powder, onion powder, Italian seasoning, and lemon zest in a bowl. Toss the chicken until well coated.
- Heat olive oil and butter in a skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes until browned.
- Add zucchini and squash to the skillet. Cook for an additional 3-5 minutes until tender.
- Sprinkle parmesan cheese and drizzle with fresh lemon juice before serving.
