- 1 and 1/2 cups almond flour
- 1/4 cup cashew butter (or peanut butter)
- 1/4 cup maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup chocolate chips (for the base)
- 1 cup chocolate chips (for the layer)
- Optional: Flaky sea salt for garnish
Instructions
- In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until smooth.
- Stir in 1/4 cup chocolate chips.
- Line a cutting board with parchment paper and transfer the mixture. Press down firmly to create an even layer about 1/2-inch thick.
- In a microwave-safe bowl, melt 1 cup chocolate chips with 1 tsp coconut oil in intervals until smooth.
- Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle with flaky sea salt.
- Chill in the freezer for about 10 minutes until set. Cut into chunks and enjoy!
