  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for the base)
  • 1 cup chocolate chips (for the layer)
  • Optional: Flaky sea salt for garnish

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until smooth.
  2. Stir in 1/4 cup chocolate chips.
  3. Line a cutting board with parchment paper and transfer the mixture. Press down firmly to create an even layer about 1/2-inch thick.
  4. In a microwave-safe bowl, melt 1 cup chocolate chips with 1 tsp coconut oil in intervals until smooth.
  5. Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle with flaky sea salt.
  6. Chill in the freezer for about 10 minutes until set. Cut into chunks and enjoy!
