Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large mixing bowl, mash the ripe bananas until smooth. Add the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt; whisk until well combined.
- Gradually stir in the flour using a spatula until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and level it off with a spatula.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring it to a cooling rack.
