Instructions

  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt; whisk until well combined.
  3. Gradually stir in the flour using a spatula until just combined; avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level it off with a spatula.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
