Instructions

- In a mixing bowl, combine the egg, applesauce, honey or maple syrup, vanilla extract, cinnamon, baking soda, baking powder, and salt. Whisk until well blended.
- Stir in the shredded zucchini until mixed.
- Gently fold in the flour until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling for about 10 minutes in the pan before transferring to a cooling rack for an additional 30 minutes.
