Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
- For the crust: Cream butter and sugar until fluffy. Mix in flour and salt until crumbly. Press into the pan.
- Bake crust for about 15 minutes until lightly golden.
- Prepare filling by mixing diced peaches, sugar, lemon juice, and cornstarch in a bowl.
- Spread the peach mixture over the baked crust evenly.
- For the topping: Whisk together eggs, sugar, sour cream, flour, and vanilla until smooth. Pour over the peach layer.
- Bake for another 35-40 minutes until set and lightly golden on top.
