- 1 cup baby carrots

- Honey or maple syrup

Instructions
- Preheat oven to 400°F (200°C).
- Rub chicken leg quarter with olive oil, thyme, minced garlic, salt, and pepper. Place in a cast iron skillet or on a baking sheet.
- Toss baby carrots with olive oil, honey (or maple syrup), salt, and pepper; spread on another baking sheet.
- Roast chicken for 35-40 minutes until golden brown and cooked through. Roast carrots for 25-30 minutes until tender.
- Sauté green beans in olive oil with minced garlic until bright green and slightly blistered (6-8 minutes).
- Serve hot, garnished with fresh parsley.
