Instructions
- Preheat your oven to 375°F (190°C).
- Sift together cake flour and ½ cup granulated sugar four times.
- In a large metal bowl, beat egg whites, salt, cream of tartar, vanilla, and almond extract until soft peaks form.
- Gradually add the remaining sugar in four additions, beating well after each addition.
- Gently fold in the flour mixture in four parts using a metal spoon.
- Pour the batter into an ungreased tube pan without scraping the sides.
- Bake for about 30–35 minutes or until golden brown; cool upside down.
