- 1 cup granulated sugar
- 4 large egg whites
- 1 tsp vanilla extract
- 1/4 tsp salt
- 4 tbsp melted butter
- 6 tbsp unsweetened cocoa powder
- 11 tbsp all-purpose flour
- 1 gallon ice cream (any flavor, softened)
- 16 oz chocolate wafers
- 1.5 cups chopped peanuts
Instructions
- Preheat the waffle cone maker.
- In a mixing bowl, whisk together sugar, egg whites, vanilla, salt, melted butter, cocoa powder, and flour until smooth.
- Pour about 2–3 tablespoons of batter into the waffle cone maker and cook for 40–45 seconds.
- Hang cooked cones on a rack to cool in taco shape.
- Soften the ice cream and stir for even consistency.
- Fill each cooled taco shell with softened ice cream and freeze until firm.
- Melt chocolate wafers in a microwave-safe bowl and dip the open side of each taco into it; then dip in chopped peanuts.
- Freeze again until ready to serve.
