Instructions
- Preheat your oven to 350°F (175°C).
- Cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture until a dough forms.
- Roll dough into small balls, shape into ovals, and press down with a fork to create a pattern.
- Bake on a parchment-lined baking sheet for 8–10 minutes until lightly golden; cool on a wire rack.
- Prepare the filling by beating together remaining creamy peanut butter and softened butter; mix in powdered sugar and vanilla extract until smooth.
- Assemble cookies by spreading filling between two cooled cookies.
