  • Total Time: 49 minute
  • Yield: Approximately 32 servings (1 oz each) 1x

Ingredients

Scale
  • 1 liter of 95° alcohol (or 40° fruit alcohol)
  • 400g sugar (or 225g if using fruit alcohol)
  • 6 organic lemons
  • 1.2 liters spring water (or half a glass if using fruit alcohol)

Instructions

  1. Wash and zest the lemons, avoiding the bitter white pith.
  2. Combine lemon zest with alcohol in a glass jar, seal tightly, and let it infuse in a cool dark place for one month, shaking gently once or twice a week.
  3. After one month, strain the infused alcohol into a saucepan and prepare a sugar syrup by boiling sugar with water until dissolved. Let it cool completely.
  4. Mix the cooled syrup with the strained lemon-infused alcohol and pour into clean bottles. For best flavor, let it rest for an additional ten days before serving.
