  • Total Time: 31 minutes
  • Yield: Approximately 12 servings 1x

Ingredients

Scale
  • 2 and 1/4 tsp active dry yeast
  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups all-purpose flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water
  • 2 tbsp baking soda
  • 1 egg (for egg wash)
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (for topping)

Instructions

  1. Activate the yeast by combining warm water, yeast, and sugar in a bowl. Let it foam for 5-10 minutes.
  2. Combine flour, olive oil, and salt in the bowl. Knead until a ball forms (about five minutes) using a stand mixer or by hand.
  3. Let the dough rise in a greased bowl covered with a cloth for about an hour until doubled in size.
  4. Punch down the dough and divide into 12 equal pieces. Roll into ropes and shape into pretzels.
  5. Preheat oven to 450°F (232°C) while boiling water mixed with baking soda in a large pot.
  6. Boil each pretzel for 15-30 seconds before placing on parchment-lined baking sheets.
  7. Brush with an egg wash and sprinkle desired toppings.
  8. Bake for about 10-11 minutes until golden brown.
  9. Cool on a wire rack before serving.
