- 2 tbsp brown sugar
- 1 and 1/2 cups warm water
- 4 and 1/2 cups all-purpose flour
- 1/4 cup olive oil
- 2 tsp salt
- 6 cups water
- 2 tbsp baking soda
- 1 egg (for egg wash)
- Coarse salt (for topping)
- Everything but the bagel seasoning (for topping)
Instructions
- Activate the yeast by combining warm water, yeast, and sugar in a bowl. Let it foam for 5-10 minutes.
- Combine flour, olive oil, and salt in the bowl. Knead until a ball forms (about five minutes) using a stand mixer or by hand.
- Let the dough rise in a greased bowl covered with a cloth for about an hour until doubled in size.
- Punch down the dough and divide into 12 equal pieces. Roll into ropes and shape into pretzels.
- Preheat oven to 450°F (232°C) while boiling water mixed with baking soda in a large pot.
- Boil each pretzel for 15-30 seconds before placing on parchment-lined baking sheets.
- Brush with an egg wash and sprinkle desired toppings.
- Bake for about 10-11 minutes until golden brown.
- Cool on a wire rack before serving.
