Instructions
- Preheat oven to 400°F (200°C).
- Peel and slice sweet potatoes into ½-inch rounds.
- Toss sweet potato rounds with olive oil, salt, and black pepper in a mixing bowl.
- Arrange rounds on a lined baking sheet in a single layer.
- Roast for 20-25 minutes, flipping halfway through until tender and slightly browned.
- Remove from oven and let cool slightly.
- Sprinkle feta over warm rounds and drizzle with honey.
- Top with optional herbs and nuts if desired.
- Serve warm.
