Ingredients
- 1/3 cup water
- 3/4 cup granulated sugar
- 3/4 cup light corn syrup
- 3 large egg whites (room temperature)
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Heat over medium-high without stirring until it reaches 240°F.
- While the syrup heats, whip egg whites and cream of tartar in a stand mixer until soft peaks form (about 3-4 minutes).
- Once the syrup reaches temperature, slowly pour it into the whipped egg whites while mixing on medium speed.
- Continue whisking on medium-high for about 7-8 minutes until thickened and glossy. Add vanilla extract and briefly mix.
- Allow to cool completely before storing in an airtight container at room temperature for up to two weeks.
