Instructions
- Preheat your oven to 375°F.
- In a cast iron skillet over medium heat, cook the chopped turkey bacon until crispy (about 5-7 minutes). Remove and set aside.
- In the same skillet, sauté the diced potatoes until golden brown (approximately 10 minutes).
- In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
- Pour the egg mixture over the potatoes in the skillet. Top with cooked turkey bacon and grated cheddar cheese.
- Cook on stovetop for about 3 minutes until edges begin to set.
- Transfer skillet to the oven and bake for 15-20 minutes or until the center is set.
- Let cool slightly before garnishing with fresh chives and serving.
