Instructions
- Preheat your oven to 350°F (175°C). Grease an eight-inch round baking pan or line it with parchment paper.
- In a bowl, whisk together flour, baking powder, and sugar until combined.
- In another bowl, beat yogurt, oil, eggs, lemon zest, and vanilla until smooth.
- Gradually mix dry ingredients into the wet mixture, stirring gently until just combined.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
