Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  3. In another bowl, mix vegetable oil and grated carrots. Fold in nuts if using.
  4. Combine wet and dry ingredients until just mixed; pour into the prepared dish.
  5. Bake for 25-30 minutes until a toothpick comes out clean. Cool completely before frosting.
  6. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until desired consistency is reached.
