- 1 cup finely chopped unsalted pistachios
- 1 cup granulated sugar (divided)
- ½ cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- ¼ cup fresh lemon juice
- ¼ cup fresh lime juice
- 1 can (21 oz) sugar-free cherry pie filling
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix pistachios, melted butter, and half the sugar. Press into the bottom of a greased springform pan and bake for 10 minutes until golden.
- In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, lemon juice, and lime juice until fluffy.
- Pour filling over cooled crust; smooth top. Bake for about 30 minutes until set but slightly jiggly in center.
- Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
- Top with cherry pie filling before serving. Slice and enjoy!
