Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix pistachios, melted butter, and half the sugar. Press into the bottom of a greased springform pan and bake for 10 minutes until golden.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, lemon juice, and lime juice until fluffy.
  3. Pour filling over cooled crust; smooth top. Bake for about 30 minutes until set but slightly jiggly in center.
  4. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
