  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 cup fresh raspberries
  • 1/2 cup chopped unsalted pistachios
  • 1 tsp agar-agar powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers with melted butter. Press the mixture into silicone dome molds and bake for 10 minutes. Allow to cool.
  2. In another bowl, beat cream cheese and sugar together until smooth. Mix in vanilla extract.
  3. Gently fold in fresh raspberries and half of the chopped pistachios.
  4. Dissolve agar-agar in water according to package instructions. Bring to a boil while stirring, then let it cool slightly before adding it to the cheesecake mixture.
  5. Pour the filling into the cooled crusts and refrigerate for at least four hours until set.
  6. Serve garnished with remaining raspberries and pistachios.
