- 1 cup crushed graham crackers
- 4 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup fresh raspberries
- 1/2 cup chopped unsalted pistachios
- 1 tsp agar-agar powder
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers with melted butter. Press the mixture into silicone dome molds and bake for 10 minutes. Allow to cool.
- In another bowl, beat cream cheese and sugar together until smooth. Mix in vanilla extract.
- Gently fold in fresh raspberries and half of the chopped pistachios.
- Dissolve agar-agar in water according to package instructions. Bring to a boil while stirring, then let it cool slightly before adding it to the cheesecake mixture.
- Pour the filling into the cooled crusts and refrigerate for at least four hours until set.
- Serve garnished with remaining raspberries and pistachios.
