- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 tsp baking soda
- 1 1/2 cups granulated sugar
- 1 cup milk
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup coconut flakes (sweetened or unsweetened)
- 1 cup chopped pecans
- 1 can (14 oz) sweetened condensed coconut milk
Instructions
- Preheat the oven to 350°F (175°C). Grease a rectangular baking pan or line it with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and sugar until well mixed.
- In another bowl, combine milk, oil, eggs, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Once slightly cooled, poke holes in the cake using the end of a wooden spoon.
- In a saucepan over medium heat, mix coconut flakes, pecans, and sweetened condensed coconut milk until bubbly. Pour evenly over the poked cake.
