- 1 tbsp agar-agar powder
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted coconut oil and press into the bottom of a springform pan. Bake for 10 minutes until golden brown.
- In a bowl, beat softened cream cheese and sugar until smooth. Add mango puree, vanilla extract, and lemon juice; mix until combined.
- Dissolve agar-agar in water over medium heat according to package instructions, then gradually mix it into the cream cheese mixture.
- Pour the filling over the baked crust and chill in the refrigerator for at least 4 hours until set.
- Release from the springform pan, slice, and serve chilled.
