Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a stand mixer, cream the butter, white sugar, and brown sugar until light and fluffy.
- Add the egg, egg yolk, and vanilla; mix until fully combined.
- Gradually add flour, baking powder, baking soda, salt, and cocoa powder; mix on low speed until just combined.
- Fold in white chocolate chips.
- Chill dough in the refrigerator for 45-60 minutes.
- Scoop dough onto prepared sheets, leaving space between each cookie.
- Bake for 10-11 minutes until edges are set but centers remain soft.
