Instructions
- 1. Prepare the noodles: Bring a large pot of salted water to boil. Cook the noodles according to package instructions until al dente. Drain and set aside.
- 2. Make the sauce: In a bowl, whisk together soy sauce, sesame oil, rice vinegar, peanut butter, and chili oil until smooth. Add warm water if needed for consistency.
- 3. Cook the chicken: Heat oil in a skillet over medium heat. Sauté garlic and ginger until aromatic, then add ground chicken and cook until browned.
- 4. Combine: Toss the cooked noodles with the chicken and pour in the sauce, stirring well until evenly coated.
- 5. Serve: Dish into bowls and top with green onions and crushed peanuts.
