Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with cooking spray or olive oil.
- In a bowl, whisk together coconut milk, lemon juice, garlic, and ginger until smooth.
- Place cod fillets in the baking dish and season with salt and pepper.
- Pour the coconut lemon sauce over the cod.
- Bake for 20-25 minutes or until the cod flakes easily with a fork.
- Garnish with cilantro before serving.
