Instructions
- 1. Sauté onions: In a large skillet, melt butter over medium heat. Add onions and salt; cook until caramelized (about 15-20 minutes).
- 2. Add flavor: Pour in vegetable broth and thyme; simmer for an additional 5 minutes.
- 3. Cook gnocchi: Boil salted water; cook gnocchi until they float (about 2-3 minutes). Drain.
- 4. Combine: Stir cooked gnocchi into the onion mixture and transfer to a greased baking dish.
- 5. Cheese it up: Top with shredded cheese and bake at 400°F (200°C) for about 20 minutes until bubbly and golden.
- 6. Serve: Let cool slightly before serving, drizzling with extra broth if desired.
