- Salt and pepper to taste
- 2 tbsp fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, melt olive oil and butter. Add sliced onions, sugar, salt, and pepper. Cook until caramelized (about 20 minutes), then stir in balsamic vinegar and thyme.
- Roll out the puff pastry on a floured surface; cut into squares. Place on a baking sheet lined with parchment paper. Top each square with the caramelized onion mixture and goat cheese. Bake for 15-20 minutes until golden brown.
