- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper, then chop into bite-sized pieces.
- In a medium saucepan, combine rice and chicken broth; bring to a boil, reduce heat, cover, and simmer for about 15-20 minutes until cooked.
- In a large bowl, mix cooked rice, chopped chicken, broccoli florets, cream of chicken soup, garlic powder, and half of the cheddar cheese until well combined.
- Transfer the mixture to the prepared baking dish and top with remaining cheese. Bake for 30-35 minutes until bubbly and golden brown.
- Let cool slightly before serving.
