Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan.
- In another bowl, beat softened cream cheese until smooth. Mix in sugar, coconut cream, and vanilla extract until creamy.
- Gently fold in pineapple chunks without overmixing.
- Pour the filling over the crust and spread evenly. Bake for about 50-60 minutes until set but slightly jiggly in the center.
- Cool at room temperature before refrigerating. Once chilled, top with toasted coconut flakes and serve.
