- 4 boneless, skinless chicken breasts
- 8 oz fresh cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup coconut milk
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse and pat dry the chicken breasts. Season both sides generously with salt and pepper.
- In a skillet, heat olive oil over medium heat. Sauté sliced mushrooms until golden brown (about 5 minutes).
- In a bowl, whisk together chicken broth, coconut milk, minced garlic, dried oregano, salt, and pepper.
- Place the seasoned chicken in the bottom of the crock pot. Layer sautéed mushrooms on top, then pour the sauce mixture over everything.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
- Serve over pasta or rice, drizzling with sauce and garnishing as desired.
