- 1 lb fresh salmon fillets
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp honey (for the sauce)
- 2 tbsp low-sodium soy sauce (for the sauce)
- 1 tsp garlic powder (for the sauce)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the salmon into bite-sized cubes.
- In one bowl, beat the eggs; in another bowl, mix panko breadcrumbs with salt and pepper for seasoning.
- Dip each salmon cube into the eggs, then roll in the breadcrumbs until fully coated. Place on the prepared baking sheet.
- Drizzle olive oil over the bites and bake for about 12-15 minutes until golden brown.
- While baking, whisk together honey, soy sauce, garlic powder, and lemon juice for the sauce.
- Serve hot with the sauce drizzled on top.
