- 2 whole wheat or regular English muffins
- 1 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup diced tomatoes
- 1/2 cup cooked chicken or turkey sausage, diced
- 2 tsp olive oil
- 1/2 cup tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each English muffin in half and place them on the baking sheet. Drizzle with olive oil.
- Spread tomato sauce evenly over each muffin half.
- Top with diced vegetables and chicken or turkey sausage, then sprinkle shredded cheese on top.
- Bake for 10-12 minutes until the cheese is melted and bubbly.
- Allow to cool slightly before serving hot.
