- 4 cups fresh broccoli florets
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 tsp agar-agar
Instructions
- Wash and chop the broccoli into bite-sized pieces.
- In a large pot over medium heat, sauté the diced onion in a splash of vegetable broth until soft (about 5 minutes). Add minced garlic and sauté for another minute until fragrant.
- Add the chopped broccoli and enough vegetable broth to cover the vegetables. Bring to a boil, then reduce heat and simmer until broccoli is tender (10-15 minutes).
- Remove from heat and blend the mixture until smooth using an immersion blender or traditional blender.
- Return the blended soup to low heat; stir in coconut milk for creaminess.
- If desired, sprinkle in agar-agar per package instructions and let simmer for an additional few minutes.
