  • 1 tsp agar-agar

Instructions

  1. Wash and chop the broccoli into bite-sized pieces.
  2. In a large pot over medium heat, sauté the diced onion in a splash of vegetable broth until soft (about 5 minutes). Add minced garlic and sauté for another minute until fragrant.
  3. Add the chopped broccoli and enough vegetable broth to cover the vegetables. Bring to a boil, then reduce heat and simmer until broccoli is tender (10-15 minutes).
  4. Remove from heat and blend the mixture until smooth using an immersion blender or traditional blender.
  5. Return the blended soup to low heat; stir in coconut milk for creaminess.
