Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the ricotta cheese, granulated sugar, lemon zest, lemon juice, and vanilla until smooth.
- In another bowl, combine the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 12-15 minutes or until lightly golden around the edges.
- Allow cooling on wire racks and dust with powdered sugar before serving.
