  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix together oats, flour, baking powder, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Scoop tablespoon-sized dough onto prepared baking sheets about two inches apart.
  6. Bake for about 10 minutes or until edges are golden brown. Let cool completely before filling.
  7. To prepare the filling, beat together shortening, powdered sugar, and vanilla extract until smooth. Spread between two cooled cookies.
