- 1 cup rolled oats

- For the Filling: 1/2 cup vegetable shortening
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix together oats, flour, baking powder, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix until combined.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop tablespoon-sized dough onto prepared baking sheets about two inches apart.
- Bake for about 10 minutes or until edges are golden brown. Let cool completely before filling.
- To prepare the filling, beat together shortening, powdered sugar, and vanilla extract until smooth. Spread between two cooled cookies.
