Instructions
- Preheat your oven to 350°F (175°C) and prepare a bundt pan with nonstick spray.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, cream the butter and cream cheese until smooth. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gently fold in pineapple chunks into the wet mixture.
- Gradually add dry ingredients to the wet mixture and stir until just combined; avoid overmixing.
- Pour batter into the prepared bundt pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack.
