  • 1 cup cooked shrimp, chopped
  • 1 cup cooked white fish, chopped
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella and cheddar cheese blend
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and prick the potatoes; bake directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  2. While potatoes are baking, combine shrimp, white fish, spinach, cream cheese, lemon juice, and half of the shredded cheese in a bowl.
  3. Once cool enough to handle, cut potatoes in half lengthwise; scoop out flesh into another bowl.
  4. Mix scooped potato flesh with seafood mixture; season with salt and pepper.
  5. Stuff potato halves with the seafood mixture; top with remaining shredded cheese.
  6. Return stuffed potatoes to the oven for an additional 15-20 minutes until heated through and golden brown.
