- 2 bottles (750 ml each) 100-proof lemon juice
- 4 cups sugar (various types can be used)
- 5 cups filtered water
Instructions
- Thoroughly wash the lemons and zest them carefully, avoiding the bitter pith.
- In a glass jar, combine lemon zest and lemon juice; seal tightly and let infuse in a cool place for two weeks, shaking every few days.
- Prepare simple syrup by dissolving sugar in heated water; allow to cool.
- After two weeks, strain the zest from the mixture and add cooled syrup to taste.
- Bottle the limoncello using a funnel and store in the freezer.
