Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes (14.5 ounces)
- 2 cups spinach or kale
- 1 carrot, diced
- 1 celery stalk, diced
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, and Italian seasoning. Mix until combined and roll into small meatballs.
- Heat oil in a large pot over medium heat and brown the meatballs on all sides (6-8 minutes). Remove from pot.
- Add beef broth and diced tomatoes to the same pot; bring to a simmer.
- Stir in diced carrots and celery; return meatballs to the pot and let cook for about 10 minutes.
- Add spinach or kale during the last few minutes of cooking and serve with fresh parsley garnish.
