Instructions
- Prepare the pie crust by mixing flour, sugar, salt, and cold butter in a stand mixer until crumbly. Gradually add ice water until the dough holds together. Chill for at least one hour.
- For the apple filling, sauté diced apples in butter, add bourbon, vanilla, cinnamon, and sugar; cook until syrupy. Cool.
- Roast blackberries with sugar and vanilla until thickened; cool.
- Roll out chilled dough; cut into pumpkin shapes and assemble hand pies with fillings.
- Bake at 375°F for approximately 25 minutes or until golden brown.
