Instructions

  1. Prepare the pie crust by mixing flour, sugar, salt, and cold butter in a stand mixer until crumbly. Gradually add ice water until the dough holds together. Chill for at least one hour.
  2. For the apple filling, sauté diced apples in butter, add bourbon, vanilla, cinnamon, and sugar; cook until syrupy. Cool.
  3. Roast blackberries with sugar and vanilla until thickened; cool.
  4. Roll out chilled dough; cut into pumpkin shapes and assemble hand pies with fillings.
  5. Bake at 375°F for approximately 25 minutes or until golden brown.
