  • 1 cup cooked rice
  • 1 cup ground meat (beef, turkey, or plant-based alternative)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Carve jack o' lantern faces on each pepper.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add minced garlic and cook for another minute.
  4. Stir in the ground meat until browned; drain excess fat. Add diced tomatoes, rice, chili powder, salt, and pepper; mix well and simmer for about 5 minutes.
  5. Carefully stuff each carved pepper with the filling mixture.
  6. Place stuffed peppers in a baking dish upright. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 10-15 minutes until tender.
  7. Garnish with freshly chopped parsley before serving.
