Ingredients
- 2 large eggs
- 1 avocado
- 1 cup mixed salad greens
- 1 cup chopped zucchini
- 1 cup broccoli florets
- 1 tsp olive oil
- 1 tsp everything bagel seasoning
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the eggs in a medium saucepan for about 7 minutes until jammy. Transfer them to an ice bath to cool before peeling.
- Preheat the oven to 425F (220C). Toss zucchini and broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-18 minutes until golden.
- In a bowl, layer mixed greens, followed by roasted veggies, halved boiled eggs, and sliced avocado.
- Season with everything bagel seasoning and serve warm.
