- 1 1/4 cup all-purpose flour
- 3/4 cup cake flour
- 1 tsp corn starch
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup cold unsalted butter (cubed)
- 1/2 cup light brown sugar (packed)
- 1/4 cup white granulated sugar
- 1 large egg
- 1 egg yolk
- 2 cups chocolate chips
Instructions
- Preheat oven to 400°F (200°C). In a bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt.
- Cream the cold butter with brown sugar and white sugar using a stand mixer until fluffy. Add one egg and one egg yolk; mix until combined.
- Gradually add the dry mixture until just combined. Fold in the chocolate chips evenly.
- Portion out six cookies (about 5.7 oz each) onto a lined baking sheet.
- Bake for 10-12 minutes until golden brown on top. Let cool on the sheet for at least 15 minutes before transferring to a wire rack.
